Spicy Turkey Tenderloins

Ingredients
- 1 lb turkey breast tenderloins
- 4 T olive oil
- 1/3 C Italian seasoned bread crumbs
- 1 t paprika
- 1/2 t cayenne pepper
- 1 egg yolk (beaten w/ 1 T water)
Instructions
- Preheat the olive oil in a 9x12 Pyrex dish in the oven at 425.
- Dip the tenderloins in the egg, roll them in the mixed bread crumbs, paprika, and cayenne, and place them in the hot Pyrex dish.
- Bake the tenderloins in the oven for 9 to 10 minutes, turn them over, then finish baking them for another 9 to 10 minutes.
- Slice (if desired), plate and serve hot.
